This is one of my FAVORITE recipes!! They are a great little snack that has helped me keep my sugar cravings at bay. You can cut the measurements below in half to make less but I like to make a lot because they literally last in the fridge forever…seriously I don’t think any of these things expire…I guess if you let it sit for years or something it might spoil.
You will need:
* 1 cup peanut butter (unsalted creamy….go crunchy if you’re into that but I’m not)
* 1/2 cup coconut oil.
* 1/2 cup honey (if you don’t want to use honey because of all the sugar replace with another half cup coconut oil).
* 1/2 cup brown rice syrup (can just do a whole cup of either brown rice syrup or honey).
* 2 teaspoons vanilla extract.
* 2 cups old fashioned oats.
* 2 cups Brown Rice Crisps.
* 1 cup Vega sport chocolate protein powder.
* 2 teaspoons Cinnamon.
* 1 cup dark chocolate chips (these are option but Fu** off if you don’t use them).
Steps:
Mix all dry ingredients in a large bowl.
Use small saucepan over low heat and melt coconut oil, peanut butter, honey, and brown rice syrup stirring constantly until it is all melted together.
Pour saucepan mixture over oats and mix until all the oats are coated with the peanut buttery goodness.
Put mixture in the fridge to cool for 15 minutes.
Mix dark chocolate chips into peanut buttery oats.
Form small – medium sized balls (whatever you want) with the mixture and stick em in the fridge!

These little guys are perfect for a snack on the run! You can also press them into a 1/2 inch deep baking pan, let them cool and cut them into little squares if you’d like! I usually eat this as an afternoon snack when I make them. I usually eat 2 balls as a snack, it keeps the serving of each ingredient very low but still satisfy’s all peanut butter and chocolate cravings.
